We had the privilege of catching up and speaking to Charlie Bown, the director of Sou-chef. Here’s what he had to say about his Sunday roast boxes.

Everyone's favourite family tradition, the Sunday Roast, the best way to bring friends and family together. Imagine if you could enjoy at Restaurant Quality roast at home without the hours of peeling those potatoes, preparing everything and cooking.... Ooooo wait, you can! Let SOU-CHEF do it for you! Their chef’s have already put in the hours doing all the prep and it arrives chilled & pre-cooked, so all you need to do is pop it in the oven or heat it up in a pan using the simple step-by-step instructions provided.

1.) Tell us about SOU-CHEF? 

We are an online meal delivery service, who supply restaurant quality meal kits and produce for you to cook at home. We deliver a range of delicious food wherever you are in the UK mainland. Cooked by our in-house chef's, we aim to recreate the restaurant experience in the comfort of your own home following our simple step-by-step instructions. 

2.) How did you get into the meal kit industry?

Charlie (the director) used to work for a large restaurant chain. When COVID first hit and all the restaurants shut, he set them up and ran an online food business selling all their food products so it wouldn’t go to waste. As the restaurants came out of the last lockdown the restaurant chain decided not to continue the service and so SOU-CHEF was born! Charlie teamed up with an independent food manufacturer who have been supplying some of the UK's leading restaurants for over 10 years.

3.) Why Sou-Chef?

Our cooking Sous Vide cooking process makes us unique. For example, our beef Sirloin joint included within the Sunday roast box is first marinated in Garlic & Thyme, this is then placed into vacuum sealed bags and put into a water tank where it is slow cooked at 58 Degrees Celsius for 2.5 hours. When it arrives, all you then need to do is put it in the oven to heat through the meat and char the outside. The Sous Vide process allows the meat to absorb the marinade and cooking at lower temperatures means it’s extra tender!  

4). What comes in the box?

Choose from Sous Vide Beef Sirloin Roasting Joint marinated in garlic & thyme, cooked medium rare or well done as per preference or a half chicken marinated garlic & rosemary.
Sous Vide Honey Roasted Vegetables. 

Sous Vide Cauliflower Cheese. 

Sous Vide Garlic & Rosemary Potatoes.

Spiced Pickled Red Cabbage.

Homemade Yorkshire Puddings.

Rich Red Wine Gravy.

5). What do I do when it arrives?

Simply unbox and follow our recipe instructions. They are not microwave meals and require finish off in the oven for the final touches. Our chefs are perfectionists when it comes to getting the perfect roast and have provided detailed instructions on how they would cook, as if they were finishing in the restaurants. All our roast boxes come with an 8-day chilled shelf life, so no rush in having to eat when it arrives!

6.) If you could live off one dish for the rest of your life what you it be? 

No debate- Seafood Paella. 

7.) Where did your passion for food come from? 

Within the family, my uncle is within the restaurant trade and cousins are in food manufacturing, but if I had to pin it down to one person it would have to be my mother. She is an amazing cook and as a family she would always have us try new dishes, not to mention the portion sizes were always huge! 

8.) The correct way of eating a pizza? 

With your hands of course!

9.) Where do you store ketchup? 

In the fridge - where else?!

10.) Peppercorn or Diane Sauce on your steak? 

Definitely peppercorn

11.) Would you have sweetcorn on a Sunday Roast? 

Absolutely not!
